Ah , but it's good to be back !
The old computer died a long and distressful death to be replaced by a smaller , zippy model that stretches my meager skills .
The snow from the major storm last week is melting in today's rain , but the temps are due to descend again to frigid digits ...sigh...is it Spring yet ???
Sharing my favorite recipe for Irish Soda Bread with a friend led to a tasty substitution . A local restaurant bakes Cranberry Orange Muffins that are the stuff of foodie dreams . This seemed to be the perfect time to experiment and so...here's the recipe :
Cranberry Orange Walnut Bread
2 cups flour Sift dry ingredients into a bowl ,add dried cranberries
1/3 cup sugar Beat egg , milk , orange juice and butter in separate
1/2 tsp salt bowl , then stir into dry ingredients and walnuts, just
1 1/2 tsp baking powder to moisten throughout . Turn into a foil lined,sprayed
1/2 tsp baking soda 8x8" brownie pan ,spread to smooth top and fill pan .
3/4 cup dries cranberries Bake in a pre-heated 350 degree oven for 30-35
1 tsp finely grated orange zest minutes . Cool a bit on a wire rack , cut into thin
1 lightly beaten egg slices , butter while still warm and enjoy !
1/3 cup orange juice
1/3 cup milk
1 Tbsp melted butter
1/2 cup chopped walnuts
1/8 tsp ground black pepper
