Recipe Tweak

The aforementioned storm brought strange cravings . There we sat , in the dark and deprived of electricity and what was I craving ? Ice Cream ! And so , today was the day to remedy that ! A friend had shared a simple recipe for Peach Ice Cream that always made wonderful use of my favorite summer fruit . The problem was that , when processed in my ice cream maker , the result was a most flavorful , but very firm dessert . Let the tweaking begin !!! The recipe called for four ripe peaches ( peeled and pitted) , 3/4 cup of heavy cream , 1/4 cup of sugar and 1 1/2 tablespoons of liqueur of choice (Amaretto , Frangelico or Nochello -nut-flavored ) . The idea was to puree three peaches and dice the fourth . The cream was to be gently heated , until the sugar added to it was melted , cooled and added to the blender with the pureed peaches and liqueur . The diced fruit was to be added to the mix and poured into the ice cream maker . What I did was to measure 3/4 cup of cream into a Pyrex cup and pour 1/2 cup of it into a bowl and whip it until it had firm peaks . The remainder went into the microwave with the sugar for ten-second intervals , to total not more than thirty seconds , to melt the sugar . That was then added to the puree and blended with the liqueur . When all was well mixed , the peach blend was gently folded into the whipped cream in batches . When almost done , the diced peaches were added . The texture was so much better...lighter...creamier , and...no need to go into the maker ! The heavenly mixture was scooped into freezer containers and tucked into the freezer for tonight's delight ! And so it was ! Enjoy !
