Autumn Thoughts

   After an extended summer that lasted well into late September , with 80 humid  daily degrees , autumn has finally arrived . The leaves are just now beginning to turn and the mornings are cool . We had a rainy spell that lasted almost all week that drove me into the kitchen for something warming to combat the bone-chilling dampness .
   What to do ? A quick scouting of the refrigerator revealed leftover rotisserie chicken ,a sweet potato , onion , celery and carrots...prime suspects for Creamy Chicken Stew ! After the veggies were sauteed and the meat tossed in , they were joined by Mrs.Dash (a salt-free seasoning) , freshly ground pepper and tarragon , in a thickened creamy sauce . Oh Joy...Oh , Rapture ! ( and it tasted even better for lunch the next day !) .
   We are closely following reports of the advance of Hurricane Matthew , which devastated Haiti , causing over 100 deaths ,and is headed into Florida and up the coast . Our prayers go out for all affected by the storm and the families mourning loved ones . May the storm head far out to sea and cause no more harm !
