Sweet Treats

It's getting to that time of year when end-of-year thank you gifts are given . As many of the recipients are ladies,the gift of choice is chocolate ! Most share my delight in the dark or bittersweet varieties (the notable exception is my best friend,who prefers white chocolate).
This year , the confection is to be home made ! The forms were duly purchased,along with gift candy boxes,tiny doilies for the inside and colorful paper cups to tuck them into . First came the ganache, (a thick,rich chocolate sauce that ,when chilled,becomes moldable). Now it must be said that this particular sauce is wonderful...in the extreme... over good ice cream,pound cake,brioche,etc or just a spoon. Once it is chilled,formed and enrobed with equally rich chocolate,it is a thing of joy.You can imagine how trying contact with such a material can be...the product testing can be gruelling...and the end result somehow a far smaller quantity that was expected ! hmmmm....mmmmmmmmmmm...
